Beef Noodles (Niu Rou Mian)

Yes, it’s good to hear more interest in the Niu Rou Mian, arugably the most popular noodle dish in Taiwan.

I’ve tried Joy’s version and it was good. Their knife-cut noodle somehow is a little less dense the others so it actually was able to absorb the broth.

Down here in the south bay (and now in Fremont as well), Darda makes one of the best Beef Noodle. However, their knife-cut noodle is too dense and doesn’t work well in the soup version. Their thinner (also homemade) noodle does a good job.

Have you had a chance to tried A&J in San Jose or Cupertino? These are the only few places that I’ve found decent versions so far.
